Ingredients: - 2 Cups Kale - 1 C Tomatoes, Diced (feel free to use canned tomatoes, just make sure to rinse them) - 1 C Quinoa, Cooked - 1 TBS Olive Oil - 1 tsp Salt
Optional Flavor Enhancers: - 1/2 C Onions, Diced - 1 TBS Crushed Red Pepper - 2 TBS Olives, Diced
