Macaroni & Cheese & Peas

Close-up of shell pasta with green peas in creamy sauce. Pale yellow and green colors dominate.

Ingredients:

1 Box pasta of choice

1 T Butter

1 C Milk

1 C Cheese (I like a mix of cheddar and mozzarella)

1 C flour

1 Bag frozen peas

Instructions:

Of note - feel free to adjust my cheese sauce amounts to ensure you get the cheese sauce that works best for you. You also can add any spices you might want - consider adding chili powder and cumin for a bit of a kick!

  1. Preheat oven to 400F.

  2. Make your preferred pasta. Drain it.

  3. Pour frozen peas (no need to defrost) into a baking dish. I'd recommend spraying it with a non-stick spray or wiping a bit of butter around it to make sure that the cheese sauce you're about to make doesn't stick.

  4. Get a large pot. Turn a burner on medium high and melt butter. Slowly start to add in flour, whisking as you go. Add a bit of milk and continue to whisk. Continue to add in flour/milk. Finally fold in the cheese.

  5. Add pasta and cheese sauce to baking dish. Mix around and coat pasta and peas with cheese sauce.

  6. Bake for 20 minutes. Check to make sure that cheese sauce is bubbly.
