Meat (less) Hot Sauce for Rochester Style Plates


- 1 t Olive Oil

- 1/2 C Diced Onion

- 2 Garlic Cloves, Diced

- 1 Box Tofu (~14oz drained)

- 1 cup vegetable broth (You may also consider 1 C of veggie meat crumbles if you want a classic texture.)

- 1 6 oz. Can Tomato Paste

- 1 T Brown Sugar

- 1 t Cayenne Pepper

- 1 t Chili Powder

- 1 t Cumin

- 1/4 teaspoon cinnamon

- 1/4 teaspoon allspice (if desired)

- Salt & Pepper, To Taste


-Sautee onion and garlic in oil until soft. Add tofu and spices. Break up tofu to small pieces while stirring in spices. Continue cooking until tofu is browned (it will absorb the coloring of the spices).

-Stir in broth, tomato paste and brown sugar.

-Simmer to desired consistency.
