-1 C Rice (cooked)
-1/2 Can Black Beans or 1/2 C Taco Meat
-1/4 C Taco Sauce (I recommend Ortega, but anything should work)
-2 Bell Peppers
-1/2 C Cheese
-Preheat oven to 425.
-Mix rice, beans, and taco sauce in a bowl. Split between two peppers.
-Cook for approximately 40 minutes or until desired pepper texture.
-Take out of oven, split cheese between two peppers.
Makes two servings.
