Veggie Rice Bowl



Ingredients:

-1 C Rice

-1 C Vegetables of Choice

-1 T Olive Oil

-1/2 Can Beans/Meat of Choice

-1/4 C Cheese of Choice

-Seasonings (optional and based on what vegetables/protein you're adding


Directions:

-Preheat oven to 425.

-While oven is heating, toss vegetables with protein of choice and oil to coat. Add desired seasonings.

-Roast for 40 minutes.

-Put roasted mix and cheese over rice.



 

This recipe is very open ended so feel free to explore different combinations. Below are some different options for combinations:

- Buffalo: chicken with chili powder, roasted carrots and onions, blue cheese, top with hot sauce and celery

-Mediterranean: chickpeas with sea salt and dill, roasted zucchini and artichokes, feta cheese, add Tzatziki

-Taco: ground beef with taco seasoning, roasted peppers, onions, and mushrooms, cheddar cheese, top with guacamole or sour cream

-Leftovers: Add whatever ingredients need to get used up from your fridge and see how they go together!
