Caprese Macaroni & Cheese


-1 Box Pasta of your choice -1/4 C Flour

-1 C Mozzarella

-1 C Milk

-2 C Grape Tomatoes

-2 T Pesto

-1 T Butter

-Salt, to taste


-Cook pasta. Once completed drain and let cool.

-Preheat oven to 375.

-While pasta is cooling, make a roux. Put a burner to medium heat and allow the butter to melt, slowly whisking in flour at the same time. You will get a brown-ish paste. Add the pesto and continue to stir.

-Add half of the milk and continue to stir to prevent scalding the milk. Then mix in half of the cheese.

-Once this has solidified mix in the other half of the flour and cheese.

-Fold in the pasta, using a spatula to mix. Take off the burner.

-Halve your tomatoes.

-Spray a baking pan with non-stick spray. (I recommend using a 9x9 but you can for sure do this in other sized pans as well.)

-Add the pasta and tomatoes to the pan.

-Cook for 30-40 minutes or until the top is golden brown. Enjoy!
